Timo Restaurant: Mediterranean Sea Bass

Ingredients:

Sea Bass

Breadcrumb herb olive oil filling

Fire roasted peppers

1 tomato

Sauce ingredients:

Garlic

Olive oil

Hint of rosemary

Chopped tomatoes

Tomato broth

Black olives

White wine

Recipe:

Recipe for Sauce

1. Sautee olive oil with garlic

2. Add the chopped tomatoes, white wine and olive oil

3. Add tomato broth and black olives

4. Hint of rosemary

5. Serve on top of cooked Sea Bass

 

 

Recipe:

  1. Debone Sea Bass inside out
  2. Remove scales from outer body
  3. Add pieces of tomatoes and fire roasted peppers to filet
  4. Add the breadcrumb herb olive oil filling
  5. Tie the sea bass from side to side
  6. Sear the flavors tights on both sides
  7. Place filet in the wood burning oven for about 30 minutes
