Octopus Salad

Ingredients:

  • octopus
  • celery
  • white wine
  • salt
  • bay leaf
  • extra virgin olive oil
  • lemon
  • parsley
  • endives
  • artichokes

Recipe:

Smash the octopus, boil in water and white wine, and add celery, salt  and bay leaf. Once cooked, drain the octopus and let it cool down. Chop  the octopus and season with extra virgin olive oil and squeeze fresh  lemon and add fresh chopped parsley. Serve with fresh endives and  artichokes marinated in olive oil.
