Seared Scallop and Italian Parsley Salad

Ingredients:

  • 2 scallops
  • Flat leaf Italian parsley
  • Tangerine
  • Red onion
  • Jalapeno
  • 1/2 lemon juice
  • Salt and pepper
  • Olive oil

Recipe:

Sear scallops for 2 1/2 minutes on each side, while scallops are cooking, prepare the salad on a side of thinly cut red onion, jalapeno, flat leaf Italian parsley, drizzle some olive oil and 1/2 lemon juice, salt and pepper to personal liking. Enjoy!!!!
